For meat-free days this is a fantastic one-pan wonder. So simple to prepare with minimal washing-up, making it a perfect mid-week meal. If you think tofu isn’t your thing, do give this a try. When it’s roasted it takes on a firmer texture and absorbs the aromatic flavour from the Thai curry paste.
I find this filling enough as it is, but Steamed Basmati Rice and Cucumber, Mango and Peanut Salad would be good acc
