A tasty coleslaw recipe is always good to have on hand for any time of year.

Ingredients

  • 2 red skinned apples, halved, cored and cut into matchsticks
  • ¼ red or white cabbage, very finely sliced

Method

Put the apple, cabbage, carrot, onion, celery and fennel in a mixing bowl and toss together.

In a separate bowl, mix together the lemon juice, tahini, mayonnaise, honey, cumin and yoghurt until smooth. Pour over the vegetables and mix well. Season with salt and pepper. Transfer to a serving bowl and scatter with pomegranate seeds and sesame seeds.
