These olive oil roasties are a real crowd pleaser. It’s the little crispy, salty, crunchy pieces of potato that are irresistible, making everyone want to go back for more, so do make sure you make plenty!

Ingredients

  • 1 kg/2 lb 4 oz new potatoes
  • olive oil

Method

Preheat the oven to 200°C/180°C fan/400°F/gas 6.

Cook the potatoes in boiling salted water for 10–12 minutes until they are almost cooked through. Drain and cool for a few minutes. Transfer them to a roasting tray and crush each one lightly so they are just holding their shap
