Follow this method for cooking basmati and you should have perfect, fluffy rice every time. The rice is cooked in a measured amount of water so that by the time it’s ready, all the liquid has been absorbed, and the rice steamed, meaning there is no draining of gloopy, starchy water required. As a general rule you require 1-part rice to 2-parts water, and for one average portion weigh 75g/2¾ oz per person, with 150ml/5 fl oz water.
