I am a fan of using silken tofu blended into sauces and dressings, as it not only adds a smooth rich creaminess but loads of nutrient-rich goodness too. I’ll use it at least once a week blended into the Flexible Tomato Sauce but here I am using it in a very versatile dressing for salads or roasted veg, or a dip for vegetable crudité. Get ahead by making this up to 4 days in advance and storing it in the fridge.
