If you’re going to go to the effort of making Cornish pasties, then it is well worth making them the ‘proper’ way. The rich flaky pastry is made using a combination of butter and lard with strong bread flour for extra pliability. The filling uses thinly sliced beef skirt (very tender with little fat), swede, potato, onion, butter and plenty of seasoning that all bake together within the pastry, creating a juicy gravy. Do take your time with the assembly and getting the classic crimped edge
