Cornbread is a fantastic bread that’s naturally gluten-free and very open to additional flavours. Here, I’ve added a burst of smoky spice from the chipotle paste, tangy bite from mature Cheddar cheese and a pop of sweetness from sweetcorn. It’s a meal in itself, although would be great to serve with a bowl of tomato soup or steaming chilli.
