This whisked sponge is super light and incredibly soft. It’s simple to make and amazingly uses just three ingredients. Classic Swiss roll recipes will have a fruit jam filling, but I wanted to make this into something a little more special with the tangy blackcurrant purée and lightly whipped elderflower-flavoured cream. The perfect summer cake.
