Friands are small, oval-shaped cakes originating in France that are made using ground nuts and egg whites, giving them a light texture. They can be flavoured with fruit, spices, chocolate or citrus zests. These friands are delicately flavoured with ground pistachios, raspberries and rosewater. If you can’t get hold of a friand mould, you can just as easily bake them in a muffin tin. Please do make sure you use frozen raspberries for this recipe as they retain their shape far better and make
