My husband Phil has a weakness for shortbread, so he was my chief taste tester when putting this recipe together. I tried various versions that would be suitable for a variety of dietary requirements and still have the flexibility of using different flavours. These were the clear winner and are light, crisp and lemony. They should stay tasting fresh for a good few weeks once made, but if you have a Phil in your house then they won’t be around long enough for you to check.</
