These are a Middle Eastern take on jammy thumbprint cookies using rich sesame seed paste and apricot jam. The addition of tahini not only gives them a crumbly, shortbread-like texture but makes them melt in the mouth. They take hardly any time at all to prepare and once made will stay fresh for days. If sesame isn’t your thing, they can also be made using a smooth nut butter.
