These biscuits are delicate, crisp and buttery, and would be great to serve with creamy desserts such as a posset or syllabub. I find myself sneaking the odd one here and there throughout the day if I’ve made a batch, but they are light and delicate enough to not feel guilty about!
They use buckwheat flour, which is naturally gluten-free and has a very distinctive strong nutty flavour.
