These twice-baked crisp Italian biscuits are a fantastic after-dinner coffee accompaniment, or low-fat pick-me-up throughout the day. The colourful pistachios, apricots and dark chocolate are a great combination, however, other dried fruits, nuts and chocolate chips work just as well in the biscotti, so don’t feel you have to stick to the recipe.
