Strawberry cheesecake tart

Sometimes simplicity is best and when fresh strawberries are at their sweetest and juiciest, there is very little they need to be served with. The crunchy puff pastry base and sweet mascarpone cream are all that is required here. The fact that this is so simple to make is an absolute bonus – and you can easily fool any dinner guests into thinking you’ve spent hours making it just for them!

When strawberries are not so great, I would go for other fruits such as slices of ripe peaches
