These are the perfect make-ahead breakfast that can be stored in the freezer so you can enjoy freshly baked pastries whenever you like. Made with individual portions of puff pastry, layer of sweetened cream cheese and a dollop of your chosen jam, they are a quick to make, quick to cook and especially quick to eat!
Line a baking tray that will fit in your freezer with baking parchment. Unroll the pastry and cut into 12 squares, then transfer the pastry to the baking tray and make a start on the filling.
Beat together the mascarpone, sugar, maple syrup or honey and vanilla until completely smooth. Transfer to a piping bag and pipe about 1 tablespoon in the middle of each pastry square. Alternativel
