A galette is an open pie that doesn’t require any pressing into a tin or pre-baking, so it is ideal for those wanting a quick and rustic pastry tart. You can fill with whatever fruit you fancy. I love making the most of figs when they’re around, and these are baked with some bittersweet orange marmalade that bubbles around the figs making a sticky sauce.
