This takes the classic lemon meringue pie to another level. Swapping the lemon filling for beautiful ruby or pink grapefruit makes it mouthwateringly good and a stunning pink colour. As for the meringue topping, I’ve swapped the usual white sugar for soft brown sugar, which creates a delicate caramel flavour and pairs beautifully with the grapefruit filling.
