Ingredients

  • 2 tablespoons olive oil
  • 2 large onions, chopped
  • 2 cloves of garlic, crushed
  • 450 g (1 lb) tomatoes, skinned and chopped
  • 1 teaspoon caster sugar
  • few sprigs fresh rosemary and thyme, chopped

Method

Heat the oil in a large pan and fry the onions and garlic for about 3–4 minutes, until softened and golden. Tip in the tomatoes, sugar and herbs. Cover and simmer gently for at least half an hour, until you have a rich, red sauce. Whizz in a food processor or blender or rub through a sieve. Serve with Tuna Steaks.
