  • 1 kg (2 lb) squid–ask your fishmonger to clean and prepare the squid for you, otherwise read the notes opposite

Method

Cut the squid hood into small squares and the tentacles into 1 cm (½ pint) lengths. Rinse these in the vinegar, mixed with 600
