Don’t be put off by the name of this beast, which is, in fact, a smooth-shelled native Australian crab. You can use any fresh live crab.

What made this a particularly interesting dish for me was that I cooked it for a troupe of Aboriginal dancers, who were painted in their traditional manner, high up in a rainforest in the mountains above Cairns.
