This is a super Sunday brunch dish, particularly good for using up any leftover cold roast chicken or turkey, though in the original version I did at the Botanical Hotel in Melbourne, I prepared the chicken expressly for this dish.
But it is fun to cook and I made it for my chums Harold and Madge of Neighbours, in between rehearsals. And it must have been okay because they are still in work.
