Katherine in the Northern Territory has superb Mediterranean vegetables, courgettes, peppers and so on. So I cooked this little sort of Chicken Provençale dish for my two chums ‘The Padre’ and ‘Strawberry’, a pair of tough road train drivers. I must say it is more a dish for a summer Sunday lunch with gallons of iced rosé than it is for a pair of rough diamonds who would rather have had half a roast steer any day.
