  • 8 lambskidneys, skin removed and cored
  • finely grated zest and juice of 1 orange

Method

Cut each kidney into eight pieces. Mix together the orange juice and zest, oil and oregano in a large bowl (not aluminium) and add the kidneys. Leave to marinate for at least 2 hours.

Lift out the kidneys, reserving the marinade, and thread them on to the skewers with the mushrooms. Season to taste with salt and pepper. Barbecue or pop under a preheated hot grill for 5–8 minutes, turnin
