Fried Pork Spareribs

A deliciously simple snack that you can pan-fry. Alternatively, you could just as well grill it over charcoal.

Ingredients

  • 1 kg (2–2¼ lb) pork spareribs
  • 2 tablespoons fish

Method

Put the spareribs into a shallow bowl. Mix together the fish sauce, sugar and garlic and brush over the ribs. Season with black pepper and leave the ribs to soak for 30 minutes or so.

Heat the oil in a large frying pan and fry the ribs for about 20–30 minutes, until cooked and tender, turning from time to time. Drain on kitchen paper and serve with rice, garnished with coriander or pars
