  • 1 kg ( lb) pork fillet or boneless pork loin, trimmed
  • fresh coriander leaves, to garnish


Pop all the ingredients for the marinade into a food processor or blender and whizz to a smooth paste. Put the pork and marinade into a large plastic bag, tie securely and leave the meat to marinate for at least a couple of hours, but preferably overnight. Turn the bag occasionally to make sure that the meat is well covered with the marinade.
