Although I absolutely adore eating puddings, I am really bad at making them. So I asked one of Tasmania’s well-known cooks and writers for a couple of suggestions. Judith Sweet gave me these from her delicious little booklet, Taste of Tasmania. For this pancake, you could use quinces as well as the apple and pears if you can find any.
