  • 2 garlic cloves, peeled and crushed
  • 2 thin slices peeled fresh root ginger, finely chopped
  • 2 spring onions, trimmed and coar


  1. Heat some oil in a heavy pan or casserole and stir-fry the garlic, ginger and spring onions until golden brown.
  2. Add the beef and all the remaining ingredients except the carrots, then pour in enough cold water to cover the meat.
  3. Bring to the boil and skim off any foam, then reduce the heat and simmer gently, partially covered, for about 1½ hours.
