You can, in fact, buy dumpling wrappers if you are lucky enough to have a stockist near you. However, they are very easy to make yourself and below is a good straightforward recipe. Bean curd skins also work as dumpling wrappers, but they are quite fragile and brittle so layer the skins in damp cloths to reconstitute them before using.

Ingredients

  • 250 g/9 oz plain flour, plus extra for dusting
  • 1 teaspoon baking powder

Method

  1. Sift all the dry ingredients into a bowl.
  2. Beat the egg yolks with the water.
  3. Make a well in the centre of the dry ingredients and pour in the egg and water mixture. Mix to a dough with a fork, then dive in with your hands and transfer the dough to a well-floured surface and knead well for about 4 minutes. Roll the dough in flour and wrap in clingfilm
