  • 300 g/11 oz peeled shrimps or small shelled raw prawns, finely minced with
  • 75 g/


  1. Mix the minced shrimps or prawns and the pork with the water chestnuts, spring onions, egg white, cornflour and sesame oil. Season with rice wine, sake or sherry and salt and pepper and beat to a paste.
  2. Spread the mixture over the bread, then sprinkle with the ham and sesame seeds, pressing them lightly into the paste. Cut each slice into three strips.
