Whip together the cornflour with the egg whites to make a batter.
Heat sufficient oil for deep-frying in a pan to about 180°C/350°F.
Dip the mushroom slices into the batter until they are well coated, then drop into the hot oil - do not crowd the pan, cook about 4 at a time - and cook until they have risen to the surface and are golden.
