These are wonderful sprinkled over all manner of Chinese dishes. You can do the same with peeled shallots. For garlic lovers, you can also serve them cold as a nibble.

Ingredients

  • 10 fat garlic cloves, peeled and cut lengthways into very thin slices
  • vegetable oil, for frying

Method

  1. Heat the oil in a pan, add the garlic and fry until golden brown, but be careful not to burn them.
  2. Lift out of the oil, drain on kitchen paper and serve hot.
