This is a basic guide to cooking flat fish such as plaice, Dover sole, lemon sole etc., in a simple and delicious way.


Golden Rules

  1. Skin both sides of the fish and trim fins.
  2. Have the grill very, very hot.
  3. If frozen, ensure that the fish is completely defrosted and dry.
  4. Have plenty of lemon around and also a good home made mayonnaise based sauce
