To prevent your monk fish from going rubbery, remember to take the thin film off the fish - it will make the world of difference.
Season the fish and wrap each fillet in a rasher of bacon.
Place the fish and the peeled garlic in an oven dish with the butter. Squeeze the lemon juice over and sprinkle the herbs on.
Bake in a hot oven until the bacon is nearly cooked
