  • 1 chicken - marinated in lemon juice, thyme, salt and pepper for 5 hours
  • ½ lb. butter</

Method

Roast your chicken, breast down in the butter, at 180°C/350°F gas 4 basting all the while. After 30 minutes turn the bird breast up, the gas up to 5 and finish cooking turning the bird golden. Place chicken on serving dish and keep warm.

Take the roasting tray with all its juices and put on a low gas. Gently stir in the cream, taking care to mix it well with even those little bits stuck
