  • 8 lamb's kidneys 1 glass dry sherry ½ lb. depipped grapes

Method

This simple dish is quite delicious if you obey the rules:

Rule 1 - remove the fine outer skin from the kidney Rule 2-cut the kidneys in half and remove fatty gristle from inside Rule3-don't overcook the little dreams, they should be faintly pink

Rule4-marinate then in milk for 2 hours before cooking. This removes any nasty tastes.
