Fresh Broad Beans and Bacon

  • at least ½ lb. bacon diced into 1pieces
  • 2 lb. fresh broad beans


Blanch the beans for 3 minutes in boiling salted water.

Meanwhile heat your largest frying pan and add the olive oil, garlic, bacon and the strained beans. Mill over lots of black pepper and fry gently until the bacon is cooked and the beans are tender. Serve with the grated cheese.
