Ingredients

  • 1 large pineapple
  • 1 large measure kirsch or other alcohol 1 heaped tablespoon caster sugar

Method

Cut off the top of the pineapple and save it.

Using your charm persuade someone to hollow out the fruit without piercing the husk. Put half the sorbet at the bottom and refill with the scooped out pineapple. Pour over the alcohol and cover with the rest of the sorbet. Pop the lid back on and keep, very, very cold until you need to eat it.
