For the pastry

  • 7 oz. plain flour
  • 1 oz. cocoa powder
  • 5

Method

Make the pastry: mix the cocoa, flour and icing sugar together. Add the beaten eggs and knead in the butter. Leave to rest for one hour before rolling out. Divide into three 10" rounds about ⅛” thick - in other words, as thin as possible. Bake for 5 or 6 minutes at 200°C/400°F/gas 6. Leave to cool.
