For soup: Trim and discard excess fat from chicken. Place in a large pot and add enough water to completely cover chicken by at least 1 inch. Bring to a boil over high heat. Use a slotted spoon to skim off the scum that rises to the surface of the soup. Add onion, carrots, celery, salt and pepper. Reduce heat and simmer, partially covered, for 1 hour.
