Brenda Shenken of New Zealand e-mailed me, “This is a lovely, colorful dish to serve guests at a summer buffet. The original recipe called for a loaf of frozen gefilte fish, which isn’t available in New Zealand, so I prepare my own fish mixture.”

Method

Cook carrots in boiling water until tender, 15 to 20 minutes. Drain well. Microwave spinach on High for 3 to 4 minutes, until defrosted. Let cool; squeeze dry. Prepare fish mixture as directed. Divide fish mixture in 3. Spray a 12-cup fluted tube pan with nonstick spray.
