This batter recipe is ideal for fish, onion rings, boneless chicken breasts, etc.

Ingredients

  • cups flour
  • cups beer
  • dash each of salt

Method

Process all ingredients on the steel blade until smooth, about 10 seconds. Let stand at least 4 hours, either at room temperature or in the refrigerator. Dip food in the batter and deep-fry in hot oil (375°F) until crisp and golden brown. Drain well. Foods fried in this batter can be kept in a warm oven and will remain crisp. Freezes well.
