  • 2 slices whole wheat bread, quartered
  • ½ cup grated low-fat mozzarella cheese

Method

Steel Blade: Process bread with cheese for 5 to 6 seconds. Empty bowl. Process tomato and bell pepper with quick on/off pulses. Return bread and cheese to processor along with remaining ingredients. Process with 2 or 3 quick on/offs to mix. Pour into 2 lightly greased onion soup bowls. Fill to within 1 inch from the top.
