Name: Tasty Meatball Stew
Yield: Yield: 6 to 8 servings.
Ingredients: 2 lb (1 kg) lean ground beef, veal, chicken or turkey (or see Grind Your Own); 6 medium potatoes, peeled and quartered; ¼ cup water; 1 Tbsp ketchup, barbecue or soy sauce; 2 cups water (approximately); 1 can (5½ oz/156 mL) tomato paste (unsalted or regular); 1 green and/or red bell pepper, cut in chunks; ½ small onion; 2 cloves garlic; 1 bay leaf; 3 medium onions, cut in chunks; salt and freshly ground black pepper to taste; ¼ tsp dried oregano; ¼ cup dried bread crumbs, oat bran or matzo meal; 2 or 3 stalks celery; 1 egg (or 2 egg whites); 2 dozen baby carrots; ½ tsp freshly ground black pepper; 1 tsp salt (or to taste)

Method

For meatballs: Process garlic and onion on the steel blade until minced, 6 to 8 seconds. Transfer to a large mixing bowl, add remaining ingredients for meatballs and mix lightly to blend.

Shape into 1-inch balls, moistening your hands for easier handling. Place on sprayed baking sheet and bake in preheated 400°F
