This vegetable-packed sauce comes together very quickly. Cutting the veggies into chunks and then slicing them one after the other speeds up prep time-no need to empty the bowl between batches. This is a wonderful way to get more veggies into your family!

Ingredients

  • 1 lb (500 g) lean ground beef, veal or chicken (or see Grind Your Own)

Method

Place ground meat in a large microwavable bowl and microwave on High for 5 to 6 minutes, stirring 2 or 3 times to break up meat. Drain off juices.

Cut zucchini, onions, peppers and eggplants in large chunks (about 2 inches is fine).

Slicer: Slice zucchini, onions and peppers, using light pressure. Spray a Dutch oven with nonstick spray. Add oil and heat on medium-high hea
