  • 5 or 6 medium carrots, cut in chunks (about cups)

Method

Steel Blade: Process carrots until finely minced, 12 to 15 seconds. Add eggs, oil and brown sugar. Process until well mixed, about 45 seconds. Add remaining ingredients, except green peas or broccoli, and process with 4 or 5 quick on/offs, just until flour disappears.

Pour into sprayed 6-cup ring mold or small fluted tube pan. Bake in preheated s
