Method

Preheat oven to 400°F. Pour oil in 7- × 11-inch glass baking dish and heat until oil is piping hot, about 5 minutes.

Grater: Cut sweet potatoes to fit feed tube. Grate, using medium pressure. Empty into large mixing bowl. You should have about 6 cups.
