Ingredients

  • 3 or 4 slender zucchini (about 1 lb/500 g)
  • salt for sprinkling

Method

Slicer: Wash zucchini and pat dry. Trim off ends; cut zucchini to fit feed tube. Use the center mini-tube if your processor has one. Slice zucchini, using firm pressure. Sprinkle with salt and let stand 20 minutes to remove excess moisture.

Combine crumbs, salt, pepper, garlic powder and oregano. Pat zucchini dry. Dip slices in beaten egg, then seasoned crumbs.
