These scrumptious patties are a variation of my favorite veggie burgers. Everyone loves them!

Ingredients

  • 1 pkg (10 oz/300 g) frozen chopped spinach

Method

Microwave spinach on High for 5 minutes. Cool and squeeze dry. Place in a large mixing bowl.

Pierce sweet potatoes with a fork. Microwave on High for 8 to 10 minutes, until tender, turning them over halfway through cooking. Let cool. Cut in half and scoop out pulp. You should have about 3 cups. Combine with spinach.
