Cauliflower replaces potatoes in this low-carb version of potato salad!

Ingredients

  • 1 medium cauliflower, cut up
  • 3 hard-cooked eggs (or 5 hard-cooked egg whites)

Method

Cook cauliflower in boiling water to cover until very tender, 15 to 20 minutes. Drain well and pat dry. (Or microwave, covered, on High for 7 to 8 minutes.) You should have about 4 cups. Let cool. Eggs should be cooked in advance and cooled.
