Try this on pasta, vegetable salads or coleslaw, or as a marinade for chicken or fish.

Ingredients

  • 1 large Vidalia onion (or 1 lb/500 g mild, sweet onions)

Method

Cut off a small piece (about 1 to 2 Tbsp) from 1 end of onion and reserve. Pierce skin of remaining onion in several places with a sharp knife. Place cut side down in a microwavable bowl. Microwave on High 5 to 6 minutes, until soft. Let cool; discard peel.
